My go-to breakfast

I meal prep my breakfasts because I'm not hungry enough to eat in the morning. Instead, I pack it to go and eat it at work.

Every weekend (when I'm being good and diligent) I dice 1 or 2 sweet potatoes, toss in olive oil, sprinkle with salt and curry powder, and bake at 400 degrees for about 30 mins.

Then, each morning before work, I fry up two eggs and 2 slices of turkey bacon, then toss them in with some prepped potatoes and pack it to work.
